Are You Genetically Programmed to Hate Hoppy Beer?

I’m always amazed that craft beer generates such polarizing opinions. No matter how many excited beer fans I meet, there are always a few people that love to tell me how much they hate beer, or a specific style of beer.

Now, I’m not a fan of crinkle-cut carrots, but I don’t hate them. It’s just a preference; not an all-out hatred. I can understand if you prefer other beverages more than beer, or prefer certain beer styles over others, but to generalize and say that you just don’t like it? I think that’s very limiting.

After all, beer is a very personal, multi-faceted experience that is dependent on many variables. I continue to learn that beer has as much to do with environmental conditioning as it does with your innate human makeup.

Believe it or not, humans are not born with an inclination for hand-crafted, hoppy India pale ales, and some have never developed a taste for bitter-forward beers. If you’re one of those people, I bet you’ve gotten some grief at some point from your “hop-head” friends. Don’t worry, you’re not an inhuman monster (probably—I don’t know you), and here’s why: distaste for hops is part of our human genetic heritage.

It’s Science, You Guys


During a recent taste seminar at the Great American Beer Festival, Dr. Nicole Garneau, a geneticist at the Denver Museum of Nature & Science, explained that human taste is a sophisticated sensor that is pre-wired to keep us safe and alive.

To illustrate this, imagine early hunter-gathers. Early humans were driven by the most primal and basic instinct to survive. Picture one of our ancient ancestors (I’m calling him Fred) wandering the wilderness, trying not to get eaten by whatever predators were around at that time, and searching for things that he could eat to survive.

Fred comes across two berry bushes that he’s never seen before. He tastes a berry from one bush, and it’s sweet: He swallows happily. Then he tastes a berry from the second bush, and it’s very bitter: His instinct is to immediately spit it out. Fred gathers up the sweet berries—as hunter-gatherers were known to do when they weren’t hunting—gets a job at a rock quarry, raises a family and the rest is totally made-up history.

So why was Fred immediately drawn to choose the sweet berries, having never tasted either before? The answer is in his genes. Scientists like Garneau believe that the sense of taste is hardwired into the brain to recognize whether something you ingest is going to help you or hurt you.

A sweet taste is recognized by the brain as good, because sugar represents calories and calories are needed to sustain energy and outrun sabre-toothed tigers. The taste of bitterness is an immediate red flag to the brain that warns you something may be poisonous and should be rejected–just in case.

Other tastes provide similar alerts in the brain. For instance, salt is needed by the body (salty = good), while a sour taste might mean that the food is spoiled (sour = bad). A baby’s “yuck” face when she tastes bitter vegetables is her brain’s natural, instinctual reaction and is meant to protect her from ingesting anything harmful (also it’s hilarious and adorable).

Outside Influences Shape Taste


So there you have it, IPA-haters: It’s not your fault. Dr. Garneau said that humans were never supposed to like bitter beer in the first place, and we can’t do anything about our genes, right?

Not so fast!

If humans are naturally averse to bitter tastes, why are coffee, tea and Brussels sprouts so popular? And why are so many people crazy about hops in craft beer?

The answer Garneau revealed is that the environment is to blame. Outside influences can teach your brain to override its genetic predilection and aversions. In her own example, Garneau asked the audience what I’ll ask you now: Have you ever had a bad experience with food, like getting sick from oysters? Chances are it was a while before you went back to slurping down the briny bivalves, if you’re not still avoiding them to this day. Did your genes change? Nope—you can’t change your genes—but you are now ‘conditioned’ to avoid oysters.

Conditioning allows your brain to work around your genes, like when you were a kid and thought coffee was gross. Like most of us, you probably learned to love a cup of joe as you had more exposure to it, and you realized it had the positive effect of helping you stay alert and awake.

That, Garneau said, is how we learn to like bitter beer. Exposure to foods you don’t like will show your brain that bitter foods aren’t going to kill you. It can take up to 20 instances of exposure to something until your brain re-conditions itself to recognize that something which once was potentially adverse is now welcome.

So does this mean you can force-feed someone who doesn’t like beer in general, or hoppy beer specifically, 20 hop-heavy beers and expect them to be conditioned to enjoy an IPA with you? Fat chance!

No one likes to be told what they “should” like. As hoppy beer fans, we need to respect our friends’ tastes. We like hoppy beers because we gave them a try, and then another and another, despite what our genes were telling us. We hop-heads are the ones technically going against human nature.

The moral of the story is that you can change a negative to a positive with positive conditioning. We can all benefit from giving something a try or two (or 20) before we decide to love it or hate it.

Hops Utilization

Hops have been called the spice of beer, and the analogy is apt: They have flavor and aroma qualities that can evoke tropical fruit just as easily as they can a pine forest. One hallmark of a skilled brewer is his or ability to add just the right hops at just the right times to achieve the desired profile.

It’s only somewhat recently, however, that hops have become as prized for their organoleptic properties (aspects we can experience via the senses) as they are for their bittering potential. Indeed, breeding programs historically aimed to improve alpha-acid levels while keeping cultivars classically “hoppy,” which usually meant keeping the herbal and floral aromatics so prized in noble varieties.

Boiling hops in water or wort transforms alpha acids into iso-alpha acids, which deliver bitterness. And the degree to which this happens is known as hops utilization. Hops utilization is the fraction of the available alpha acids that both (1) transform into isomerized forms and (2) remain in the finished beer, so the number is always less than 100 percent. In most cases it’s closer to 25 percent. An incredible number of variables influence this number, and the following tend to enhance utilization:
  • Hotter water
  • More vigorous boiling
  • Longer boil time
  • Larger boil volume
  • Higher wort pH
  • Lower wort gravity
  • Longer post-boil chill times
  • Smaller amounts of trub material

Logically, negating the above conditions leads to lower hops utilization.

We usually tend to think more in terms of IBUs than we do utilization numbers, and the latter directly influences the former. One International Bitterness Unit (IBU) is defined as one milligram of iso-alpha acid per liter of beer, sometimes also expressed as one part per million (a liter of water is one million milligrams, and beer is mostly water). Ergo, the better the hops utilization (more alpha acids isomerized), the higher the IBU value. Stated equivalently, you can use less hops material (or a lower alpha-acid hops) to achieve a given IBU level when you improve your utilization.

How does this translate into practical advice? Well, high-elevation brewers, for example, may consider adding a few minutes to their boil times to make up for the fact that water boils at a lower temperature. Extract brewers who brew concentrated wort can reserve a portion of the extract for the last 15 minutes of the boil to take advantage of the utilization benefits of low-gravity wort. And brewers who perform hot whirlpools or hop stands may want to reduce their 60-minute bittering charge since all of those hot-wort hops will continue to contribute bitterness to the final beer.

The only way to actually know a beer’s bitterness is to measure the IBUs directly using a method standardized by the American Society of Brewing Chemists. It involves separating iso-alpha acids out of solution and measuring their levels using an ultraviolet spectrometer, a procedure beyond the reach of most hobbyists. But brewing software such as BeerSmith offers reasonable estimates based on established formulae. And for all but the most obsessed brewers, such estimates are usually enough.

Humulus Lupulus (hops) are the flowering cone of a perennial vining plant and a cousin of the cannabis variety (sorry no THC in this stuff) that typically thrives in climates similar to the ones that grapes do. Hop plants are dioecious, meaning the males and females flower on separate plants -- and the female cones are used in the brewing process. Hops are the age old seasoning of the beer, the liquid gargoyles who ward-off spoilage from wild bacteria and bringers of balance to sweet malts. They also lend a hand in head retention, help to clear beer (acting as a natural filter) and please the palate by imparting their unique characters and flavours. Basically, hops put the "bitter" in beer. 

The following is a growing list of different hop varieties.

AhtanumAhtanum is an aroma-type cultivar bred by Yakima Chief Ranches. Its name is derived from the area near Yakima where the first hop farm was established in 1869 by Charles Carpenter. (alpha acid: 5.7-6.3% / beta acid: 5.0-6.5%)
AmarilloAmarillo is an aroma-type cultivar of recent origin, discovered and introduced by Virgil Gamache Farms Inc. (alpha acid: 8-11% / beta acid: 6-7% )
CascadeCascade is an aroma-type cultivar which originated as the first commercial hop from the USDA-ARS breeding program. It was bred in 1956 but not released for cultivation until 1972. It reached its peak in 1975 when it produced 13.3% of the total American crop. It was obtained by crossing an English Fuggle with a male plant, which originated from the Russian variety Serebrianka with a Fuggle male plant.

A very popular U.S. variety, with a moderate bitterness level and fragrant, flowery aroma. Cascade is often used in highly hopped West Coast ales that have a citrus-floral hop character. (alpha acid: 4.5-6.0% / beta acid: 5.0-7.0% )
CentennialCentennial is an aroma-type cultivar, bred in 1974 and released in 1990. The genetic composition is 3/4 Brewers Gold, 3/32 Fuggle, 1/16 East Kent Golding, 1/32 Bavarian and 1/16 unknown.

A relatively new hop on the market, this hop used to be called CFJ90. Described by some as a "Super Cascade" and we tend to agree, but it's not nearly as "citrusy". Some even use it for aroma as well as bittering. Bitterness is quite clean and can have floral notes depending on the boil time. (alpha acid: 9.5-11.5% / beta acid: 4.0-5.0%)
ChinookChinook is a bittering variety with aroma characteristics released in May, 1985. It was bred by crossing a Petham Golding with the USDA 63012 male.

A high alpha acid hop with a wonderful herbal, almost smoky character when used as an aromatic during the last few minutes of the boil when dry hoping. Excellent for hopping American-style Pale Ales, especially those brewed to higher gravities. (alpha acid: 12.0-14.0% / beta acid: 3.0-4.0%)
ColumbusThis high alpha variety has a pungent aroma and clean bittering. Excellent for bitter ales and American IPA styles, and can be dramatic when dry hopped. (average alpha acid: 12%)
ClusterCluster originated from mass selection of the Cluster hop, which is an old American cultivar. It is suggested that they arose from hybridization of varieties, imported by Dutch and English settlers and indigenous male hops. (alpha acid: 5.5-8.5% / beta acid: 4.5-5.5%)
CrystalCrystal is a triploid aroma-type cultivar, released for commercial production in 1993. It originates from a seedling selection (No. 8309-37) made at Corvallis in 1983 between the colchicine - induced tetraploid 'Hallertau mf' (USDA 21397) and the diploid male downy mildew resistant aroma hop, USDA 21381M. Crystal is a half-sister of Mt. Hood and Liberty. (alpha acid: 4.0-6.0% / beta acid: 5.0-6.7%)
FuggleFuggle is an aroma-type cultivar selected in England as a chance seedling in 1861. It reached its peak in the U.K. in 1949 when 78% of the English crops were grown as Fuggle. It is also marketed as Styrian (Savinja) Golding in the Slovenian Republic. In the USA it is grown in Oregon and Washington State.

Superb in English-style ales, and lends a unique character not imparted by the more subtle American-grown Fuggles. (alpha acid: 3.8-5.5% / beta acid: 1.5-2.0%)
GalenaGalena is a bittering-type cultivar which was bred in 1968 from Brewers Gold and an open pollination, i.e. an unknown male plant. It was released for cultivation in 1978.

Galena is the most "mellow" hop of the high-alpha varieties, and has replaced Cluster as the most widely grown US hop. The bitterness is clean and well balanced. Great general purpose bittering hop. (alpha acid: 12.5-14.0% / beta acid: 7.5-9.0%)
GoldingGolding is a group of aroma-type cultivars originating in England. Over the decades, the group has been changed and widened. Mostly they have been named after villages in East Kent, (Petham, Rothersham, Canterbury, Eastwell) or hop farmers, who grew them (Amos's Early Bird, Cobbs).

English Goldings grown in East Kent, are a premium hop, called East Kent Golding and should not be confused with U.K. Goldings, which are grown in other parts such as Kent, Worcestershire, Hampshire and Herefordshire. The cultivar grown in the USA (Oregon and Washington State) is a Canterbury Golding.

The premier English aroma hop. Superb in English-style ales, and lend a unique character to fine lagers as well. This hop has a unique spicy aroma and refined flavor. (alpha acid: 4.0-6.0% / beta acid: 2.0-3.0%)
Hallertau mfHallertau mf (Mittelfrueh) is an aroma-type cultivar which originated in Germany as a land - race hop. The original Hallertau mf in Germany has been replaced with other Hallertau types with similar quality characteristics. The name indicates that it is a middle to early ripening cultivar.

If you are looking to brew an authentic European-style lager, this is the best choice. Mild spicy flavor and aroma. (alpha acid: 3.5-5.5% / beta acid: 3.5-5.5%)
HorizonHorizon is a high alpha-aroma cultivar, a diploid seedling result of a cross made in 1970 between the USDA 65009 female plant (with Brewers Gold and Early Green lineage) and the male plant 64035M. It was released as a commercial variety in 1998. (alpha acid: 10.2-16.5% / beta acid: 6.5-8.5%)
LibertyLiberty is a triploid aroma-type cultivar, the result in 1983 of the colchicine induced tetrapcoid female cultivar Hallertau mf and a downy mildew resistant male, USDA 64035M. It is a half-sister to Ultra, Mt. Hood and Crystal. (alpha acid: 3.5-4.5% / beta acid: 3.0-3.5%)
MagnumMagnum is a bittering/aroma type cultivar, bred in 1980 at Huell, the German Hop Research Instititute, from the American variety Galena and the German male 75/5/3. (alpha acid: 10.0-12.6% / beta acid: 5.0-7.0%)
Mount HoodMt. Hood is a triploid aroma-type cultivar, the 1983 result of a cross between the colchicine - induced tetraploid female Hallertau mf (USDA 21397) and the USDA 19058M, male plant. It is a half-sister to Ultra, Liberty and Crystal.

An aromatic variety derived from Hallertau with a refined, spicy aroma and clean bittering. A good choice for lagers. (alpha acid: 4.0-6.0% / beta acid: 5.0-7.5%)
Northern BrewerNorthern Brewer is a bittering-type cultivar, bred in 1934 in England from a Canterbury Golding female plant and the male plant OB21. Northern Brewer has been used in the breeding process of many newer varieties. This cultivar is grown in England, Belgium, Germany and the USA.

A strong fragrant hop with a rich rough-hewn flavor and aroma, ideal for steam-style beers and ales. Northern Brewer has a unique mint-like evergreen flavor. (alpha acid: 8.0-10.0%/ beta acid: 3.0-5.0%)
NuggetNugget is a bittering-type cultivar, bred in 1970 from the USDA 65009 female plant and USDA 63015M. The lineage of Nugget is 5/8 Brewers Gold, 1/8 Early Green, 1/16 Canterbury Golding, 1/32 Bavarian and 5/32 unknown.

Nugget is a great bittering hop with a heavy herbal aroma. (alpha acid: 12.5-14.5% / beta acid: 4.0-6.0%)
PerlePerle is an aroma-type cultivar, bred in 1978 in Germany from Northern Brewer. It is grown in Germany, Belgium and the U. S. A.

Perle is a newer variety, originally from Germany but now grown quite successfully in the US. Perle is a medium alpha hop with a very clean, almost minty bitterness and pleasant aroma. (alpha acid: 7.0-9.5% / beta acid: 4.0-5.0%)
SaazSaaz is the traditional noble hop for true pilsner beer. Saaz is famous for its spicy, clean bitterness. (average alpha acid: 3.0%)
SatusSatus is a bittering-type cultivar of recent origin. (alpha acid: 12.5-14.0% / beta acid: 8.5-9.0%)
SimcoeSimcoe is a bittering/aroma type cultivar bred by Yakima Chief Ranches. (alpha acid: 12.0-14.0% / beta acid: 4.0-5.0%)
Spalt SelectSpalt Select is an aroma – type cultivar, bred in Germany and released for cultivation in the late 1980's. It is grown in Germany in the Hallertau and Spalt areas and in the U.S.A. in Washington State. (alpha acid: 3.5-5.5% / beta acid: 3.0-4.5%)
SterlingSterling is an aroma cultivar, a diploid seedling made in 1990 with a 21522 female plant and a 21361 male plant. Its parentage is 1/2 Saazer, 1/4 Cascade, 1/8 64035M (unknown German aroma X open pollination),1/16 Brewers Gold, 1/32 Early Green, and 1/32 unknown. (alpha acid: 4.5-5.0% / beta acid: 5.0-6.0%)
TettnangTettnang is an aroma-type cultivar which originated in the Tettnang hop growing area of Germany as a land-race hop. It is grown in the U.S.A. in Oregon and Washington State.

The original noble hop from the Tettnang region of Germany, ideal for your finest lagers and wheat beers. This limited availability hop has a fine, pure aroma, that is not present in United States grown Tettnanger. (alpha acid: 4.0-5.0% / beta acid: 3.5-4.5%)
TomahawkTomahawk is a bittering hop of recent origin, bred by Charles Zimmermann. It is the first commercially grown 'Super Alpha' variety. In 1998 it contributed to 11% of the USA hop crop. (alpha acid: 14.0-18.0% / beta acid: 4.5-5.8%)
UltraUltra is a triploid aroma-type cultivar, originated in 1983 from a cross between the colchicine-induced tetraploid Hallertau mf (USDA 21397) and the diploid Saazer-derived male genotype (USDA 21237m). Ultra is the half-sister to Mt. Hood, Liberty and Crystal. Its genetic composition is 4/6 Hallertau mf, 1/6 Saazer, and 1/6 unknown. This cultivar was released for commercial production in March, 1995. (alpha acid: 4.5-5.0% / beta acid: 3.6-4.7%)
US FuggleA mild-flavored English-style hop grown in Oregon, with a fragrant wood-like aroma. Milder in character than English Fuggles. This hop imparts a smooth, well rounded hop character. (average alpha acid: 3.9%)
VanguardVanguard is a diploid seedling made in 1982 between USDA 21285, which has Hallertau mf parentage and USDA 64037m. It was released for cultivation in 1997. (alpha acid: 5.0-6.0% / beta acid: 5.0-7.0%)
WarriorWarrior is a bittering hop of a recent origin, bred by Yakima Chief Ranches. (alpha acid: 15.0-17.0% / beta acid: 4.5-5.5%)
WillametteWillamette is a triploid aroma-type hop, which originated in the mid 1970’s and is a seedling of Fuggle. It is a very popular aroma hop, contributing in 1998 to 18% of the total USA hop crop.

A variation on English Fuggle hops grown in Oregon and Washington. Willamette has a fragrant spicy woody aroma. An excellent American aromatic hops for ales and lagers. (alpha acid: 4.0-6.0% / beta acid: 3.5-4.5%)

Hops Alpha Acid Table

Alpha Acids from hops contribute to the bitterness in beer. During the boil alpha acids are isomerized and increase international bittering units (IBUs). .

Hops also contain beta acids, which contribute to aroma only. The more alpha acids the more bittering potential per ounce. For example, one ounce of Northern Brewer (8.5) is roughly equivalent of two ounces of Domestic Hallertau (3.9) in terms of bittering potential.

This chart is a general guideline only. The actual AA varies from year to year depending on the weather, harvest conditions, and storage. This chart is from 2009.

Hopping Your Homebrew



It’s extremely common for most homebrewers to apply the wrong hopping technique to their style of beer. Knowing which technique to use for a particular style or desired flavor profile is part science, part art form, and part reading this blog post, “Hopping Your Homebrew.”

Mash Hopping


Mash hopping is simply the addition of hops directly to the mash tun itself. The hops is often placed on top of the grain bed and left to sit as the mash is sparged. Mash hopping is reported to provide a better overall balance and character to the beer, though it adds almost no bitterness.

Mash hopping is seldom used today because it requires a fairly large amount of hops and adds very little in direct flavor.

First Wort Hops


First wort hops are hops added to the boil pot at the very start of the lautering process. Unlike mash hops, first wort hops remain in the boiler during the boil and therefore do contribute bitterness to the wort.

Bittering Hops


Bittering hops or boil hops are just that, bitter. Hops added for the bulk of the boil to add bitterness to the beer. Boiling hops releases the alpha acids that provide bitterness in your beer. The longer you boil your hops, the more bitterness you will add.

Late Hop Additions


Hops added in the last 5-15 minutes of the boil are called late hop additions. These hops are usually not added for bittering, though they do contribute a small amount of bitterness to the beer. The main purpose for late hop additions is to add aroma and aromatic hop oils to your beer.

In addition to bittering compounds, hop cones from “aromatic” hop varieties contain volatile hop oils that provide the strong flowery aromatic flavor and scent desirable in many hoppy beer styles. Unfortunately most of these compounds boil off within 10-20 minutes of adding the hops.

Late hop additions should always use “aromatic” hop varieties, and should be done within the last 10 minutes of the boil to preserve as many aromatic oils as possible.

The Hop Back


A hop back is a device containing hops used inline between the boiler and chiller to infuse fragile hop oils and aroma directly into the hot wort before it is cooled and transferred to the fermenter. While a hop back does not add any significant bitterness to the beer, it can add great aroma to your finished beer.

Dry Hopping


Dry hopping is the addition of hops after the beer has fermented. Hops are typically added in the secondary fermenter or keg and left for a period of several days to several weeks. Dry hopping is used to add a hoppy aroma to the beer, as no bitterness is added with this method.

Homebrewing: How to Dry Hop Your Beer

Opening a sealed package of hops from the homebrew store gives a blast of that fresh aroma that sometimes seems to be difficult to capture in a beer. The truth is, the simple technique of dry hopping is all it takes to bring out those wonderfully fresh citrus, pine and earthy aromas in your homebrew.
Dry hopping is basically the ultimate late hop addition.
Traditional boiling changes the natural alpha acids in hops into iso-alpha acids—they're the stable compound that provides the bitter flavors in beer. Unfortunately, boiling also breaks down the volatile essential oils that comprise the aromas and much of the flavor of the hop itself. When we first talked about hops, I mentioned that the later the hops are added to the boil, the more they will affect flavor and aroma. This is because the less time hops are boiled, the fewer bitter iso-alpha acids are produced and the fewer aromatic essential oils are driven away. Dry hopping is basically the ultimate late hop addition. 
The phrase is a bit of a misnomer, since you don't keep the hops dry at all. Instead they are added to the beer in the conditioning phase, after the fermentation but before it's time to bottle. Usually this means you'll add the hops after the airlock has stopped bubbling. If you're doing a two-stage fermentation, then the dry hops would be added at the time you transfer your beer to a secondary fermentation vessel. Otherwise the rapid discharge of carbon dioxide will "scrub" the delicate flavors that we're trying to preserve. Since the beer is only around 65°F at this point in the process, the breakdown of essential oils occurs much more slowly, preserving the flavor and aromas of the hops.
Dry hopping is a great way to experiment with different recipes. You can always dry hop a Pale Ale or an IPA with the same variety of hops used in the recipe. Or you can try to find a variety that complements the flavors you're already using. In our Pale Ale, for example, dry hopping with the citrusy Amarillo hops would help bring out the grapefruit character of the Cascades added late in the boil. But you can also try dry hopping other, more unexpected styles to make a hoppy American-style Stout or a hoppy wheat beer.
When you do dry hop a homebrew, you'll want to drink it a little quicker than usual. The added aromas are still quite volatile, even at cooler temperatures, and they will dissipate within a few months of bottling. Some lasting flavors and aromas will remain after that, but you will notice that the first few bottles you open will have a much stronger aroma than the last ones in the batch.

Dry Hopping Instructions

The only equipment needed is a nylon hop bag, a few clean glass marbles, and about an ounce of hops. The job of the marbles is to sink the bag of hops to the bottom of the carboy or fermentation bucket. You can use as much as two ounces of hops for a five gallon batch, but one is enough to get the job done.
Sanitation is still important here, but since we add the hops after fermentation is complete, the alcohol present in the beer provides some protection against unwanted bacteria. Simply boil the hop bag and the marbles for about 10 minutes to sanitize. Hops are naturally antiseptic, which is one of the reasons they're used in the brewing process to begin with, so there is no reason to sanitize them. Now, just add the marbles and the hops to the bag, and put them in the fermentation vessel.

The majority of the benefits will occur within a week, but you can leave the dry hops in the fermenting vessel up to two weeks if you would like. After that, just transfer to a bottling bucket and bottle as usual.

I’m sure there are varying opinions, but it’s all speculation until someone crunches the numbers. Thankfully, there’s a person who did just that. He’s Scott Janish, a homebrewer and general beer enthusiast whose uses data to help tell some interesting stories about beer (both his and others’).
He plotted the average ABV of a beer style against its average BeerAdvocate rating (the average of all the beers in a style category), and found that, for the most part, higher-ABV beers do receive higher ratings. Styles like eisbocks, quads, and Russian imperial stouts are on the high end of both the ABV and average score spectrum, for example.
The outliers are notable, too; goses and berliner weisses tend to score high despite their low ABV, and American malt liquors score low despite their relatively high alcohol content. Give his full graph a look, and even play around with the data set for yourself.

Home brewing is becoming increasingly popular as more and more beer lovers discover just how easy it can be to a cook up a batch of your very own creation. An integral part of the home brewing process are hops, which infuse beer with its signature flavor. While some home brewers choose to purchase hops for the brewing process, many are choosing to grow hops on there own.

What Are Hops?

Hops are the female flowers of the plant known as humulus lupulus. Hops are used as a means of flavoring beer, as well playing a role in preserving the beverage. Hops offset the sweetness of malt to create a complex flavor profile that beer lovers crave. Depending on how much and what type of hops are used will determine how bitter a beer may be.

Hops were used as a method of flavoring beer as far back as the 11th century. Before then, many brewers imparted flavor to their beer by use of a variety of herbs and flowers. The resulting brews contained far less alcohol content, and were also more susceptible to spoilage.

Today, hops are an integral part of the brewing process, with many growers taking a scientific approach to this age’s old traditional preparation.
Types of Hops

There are typically two kinds of hops used in brewing. Aroma hops feature a lower acid percentage, which helps bolster the aroma of a beer. These are most commonly used as a means of finishing or conditioning a brew. Conversely, bitter hops feature a higher acid percentage. These are useful when beer is going through the boiling process.

Each of the numerous varieties of hops offers a unique flavor profile. There are many different hop varieties out there you can use to brew your beer. Here are just a few well-known hop varieties, along with a brief description of what they do for your beer:

  • Cascade:  Cascade hops are a well-known American hop created by Oregon State University in 1956. They feature a light and citrusy flavor, such as those found in a variety of pale ales.
  • Bullion: Bullion hops offer a distinctly bitter flavor profile, as found in dark ales and stouts. Dominant flavors include earthy, resin-rich notes that some beer drinkers may find too strong.
  • Challenger: Challenger hops are a very popular English variety thanks to their dual nature. The complex flavor profile includes notes of citrus and toffee, which pairs beautifully with stronger ales.
  • Fuggles: Fuggles are a version of ‘wild’ hops that first came to notice in 1860s Great Britain. Upon their introduction by one Richard Fuggle (hence the name), these hops offered an earthy taste, as exemplified by such beers as English ales, porters, as well as stouts.
  • Columbus: Sometimes referred to as Tomahawk, this hop variety is commonly used for its bitterness.
Tips on Growing Hops

Just about anyone is capable of growing hops right in their own backyards. The process starts with procuring rhizomes, which are root segments are taken from older plants. These can be found from a number of reputable dealers all over the country. Growers can also purchase potted hops plants, which can then be planted in their home gardens.

Maintenance of hops plants is relatively easy, as they are robust enough to withstand many different environmental factors.

Planting:

It’s best to choose a sunny spot for your hops plants. You’ll also need a means of support as they grow. Hops plants climb as they get bigger, and many growers construct wire supports, which allows the hops plants to curl upward. This is recommended as some vines can grow well over twenty feet long. It’s best to plant your rhizomes at least three feet apart, at a depth of about one to two inches. Plants will grow exceedingly fast at first, with plants sometimes growing a foot per day. It’s best to do your planting early in the spring, once frost is no longer a concern. Take care when watering and fertilizing your plants; too much or too little can prove detrimental to your yield.

Harvesting:

Harvest ranges from mid-August to mid-September depending on where you’re located. When harvesting, one should be aware of what to look for to indicate whether your plants are ready. Smell is important in this capacity, as well as the look and feel of the plants. Hops will smell most pungent when ready for harvest, and they should appear light in color and feel dry to the touch when ready. Once harvested, hops should be dried before being incorporated into beer. This can be done using an oven, food dehydrator, or a self-made hop dryer.

Without the addition of hops, beer just wouldn’t be the same. Growing your own for brewing purposes can be a great experience for both master brewers as well as novices. A small home garden is all you need to take your home brewing to a new level.
Planting Hops Around Your Pets

Special thanks to Brian, a commenter below, for pointing out that hops are potentially poisonous to pets. After doing some research, it appears that hops are indeed poisonous to both cats and dogs.

The toxicity can range from mild to severe, and depends on many factors, including the size and breed of your dog, as well as how much they ingested. Symptoms to look out for include: heavy breathing, anxiety, stomach pain, vomiting, extremely high temperatures, elevated heart rate, and in some cases, death. If you suspect your dog has ingested your homegrown hops or hop pellets, then it is highly recommended that you get them to an animal hospital immediately.
